Cookie Nip Millionaire Bars
 

2/3 cups softened butter
¼ cup granulated sugar
1 ¼ cups all purpose flour
1 tsp Cookie Nip


Mix these ingredients with an electric mixer until combined. The mixture will be soft. Prepare a 9 x 9 glass baking dish with parchment lining. Press the cookie mixture into the bottom of the pan and bake for 20 minutes on 350 degrees.


1 stick butter
½ cup light brown sugar
2 tblsp. Light corn syrup
½ cup sweetened condensed milk
1 tsp. Cookie Nip


In a 2 qt. saucepan, combine the ingredients and bring to a boil. Boil for 5 minutes, stirring constantly. Remove from heat and beat vigorously with a wooden spoon for three minutes. Pour over baked crust and spread with an offset spatula.


1 ¼ cups of dark or milk chocolate chips. I prefer “good” chips like Ghiradelli but use what you like. Melt the chips in the microwave in a glass dish for one minute. Stir until smooth. Pour over the top of the caramel layer and smooth out. I like to garnish with sea salt. You can add white chocolate, pecans, almonds or any garnish you like.


Refrigerate. Remove from the dish by the parchment and cut into 1” squares. These are very rich, decadent treats.
