Lavender Sugar Cookies

Perfect for Gifting

 

Blend 2 tablespoons of dried lavender with 1 ¼ cups granulated sugar in the blender until the lavender is finely chopped. Don’t blend the sugar until it is powder

 

1 ¼ cups granulated sugar (reserve ¼ cup for sprinkling on top of the cookies)

2 Tablespoons dried lavender (I order this from Amazon)

2 softened sticks of butter

3 cups all purpose flour 1 tsp. Cookie Nip

 

With an electric mixer, mix the lavender sugar, butter, flour and Cookie Nip. The dough will be crumbly like shortbread but you should be able to form it together with pressure. Roll out between parchment paper and rolling sticks. Cut small shapes because these cookies are rich. Arrange on a baking stone and sprinkle with the remaining lavender sugar. Bake for 15-18 minutes on 350 until the edges are golden brown.

 

The texture of this cookie is very unique. I like it best when it is crunchy and flaky.

 

Yields 2-3 dozen cookies
